Chocolate Chip KOOKIES!

1 1/2 c butter (3 sticks softened all day on counter)
1 1/4 c sugar
1 1/4 c br. sugar
1 T vanilla
2 eggs
2 t baking soda
1/2 t salt
1 - 24 oz bag of chocolate chips (2 regular sized bags, makes 4 cups)

Preheat oven to 350. 

Mix butter, sugars, vanilla, eggs on med. until fluffy.

Stir in flour, baking soda, and salt.  Will make a stiff dough.

Mix in chips and scoop out on ungreased baking sheet with small scooper, flattening slightly.

Bake 11-13 (11 for soft, 13 for crisp)

Cool 2 minutes then move to plate or rack.

Chocolate Crinkles

Ingredients

1 cup unsweetened cocoa powder

2 cups white sugar

1/2 cup vegetable oil

4 eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

1/2 cup confectioners' sugar

Directions

1.In a medium bowl, mix together cocoa, white sugar, and vegetable oil. Beat in eggs one at a time, then stir in the vanilla. Combine the flour, baking powder, and salt; stir into the cocoa mixture. Cover dough, and chill for at least 4 hours.

2.Preheat oven to 350 degrees F (175 degrees C). Line cookie sheets with parchment paper. Roll dough into one inch balls. I like to use a number 50 size scoop. Coat each ball in confectioners' sugar before placing onto prepared cookie sheets.

3.Bake in preheated oven for 10 to 12 minutes. Let stand on the cookie sheet for a minute before transferring to wire racks to cool.

Cow Pies

(NO BAKE CHOCOLATE OAT COOKIES)


2 cups sugar

1/4 cup cocoa

1/2 cup milk

1 stick butter (cut in small pieces)

1 tsp. vanilla

1/2 cup peanut butter

pinch of salt

3 cups quick oats



Mix sugar and cocoa in a saucepan. Add in milk and butter and cook over medium-high heat. Bring to a boil and let boil 1-2 minutes. Remove from heat and add peanut butter, oats, salt and vanilla. Mix well. Drop by spoonfuls onto wax paper.

Mom's Sugar Cookies

Ingredients

½ c. Butter

1 Egg

1 c. Sugar

2-2 ¼ c. All flour

2 t. Baking powder

½ t. Salt

½ t. Vanilla


Directions


Cream ½ c. butter with 1 c. sugar.

Blend in 1 egg.

Sift together all other ingredients.

Add to mixture and blend well.

Divide dough into two parts.

Chill for 1-2 hours.

Roll dough, one part at a time to 1/8’’ thickness.

Cut with cookie cutters.

Keep other part chilled until ready.

Bake in preheated 375 oven, 8-10 minutes.

Nanny's Pistachio Cookies (Moon Cookies)

Ingredients


1 White cake mix

1 Instant Pistachio pudding mix

½ c. Oil

3 T Water

2 Eggs
 
 
Directions


Combine ingredients well.

Drop from tsp. onto greased baking sheet.

Bake at 350 for 10 minutes.
